Chicken Cheese Surprise
A quick 30 minute meal that is full of flavor and nutrients! Even your "picky" eaters will love this one. You can use turkey breast in place of chicken - be sure to pull off the large sections of each breast side into smaller sections. One breast side from a turkey can make up to 6 smaller pieces!

Prepare the coating

Mix together in a small bowl, rice flour, salt, thyme, and pepper. Place into a square dish or put on a plate for coating the seasoned breasts in. Set aside. 

Steam (while you are preparing the breast meat), drain, and roughly chop the spinach. Set aside to cool. 

Prepare the breast: 

Split the breast into smaller sections, leaving the long side, long. You can spit it lengthwise 2-3 times with a boning knife. Placing the breast between two parchment pieces of paper, flatten them out to about 1/8-1/4" thick. This will make your pieces larger, so cut in half as you see fit. Pat dry. 

Sprinkle each side with salt and pepper. 

Place breast in dish with rice flour mix and coat each side by pressing it into the flour mixture. Set each one aside on a dry plate until finished. 

Heat a skillet over med-high heat

Place the Ghee into the skillet until melted and hot (not smoking). 

Cook

Once melted and hot, place each breast in the skillet with ghee, 1-2 minutes per side. You DO NOT want to cook the breasts all the way through (unless you love dry meat). Once fried and slightly browned but still under-cooked, place the breasts onto a baking sheet. 

Once all pieces are browned and on a baking sheet, top each one with the cooled spinach, spreading to cover the meat. Mix cheeses together, and place on top of the spinach layer. Don't be shy with the cheese, y'all. 

Place on top rack (not too close to broiler), and broil on HIGH for about 5-9 mins or until nicely browned. 

Serve and thoroughly enjoy!
