Coconut Flour Blueberry Muffins

These gluten, sugar, and dairy-free muffins are very tasty! The recipe can be adapted to make apple-cinnamon, cranberry-orange, or other flavors of muffin or cake.

Ingredients
- (6) Soy-Free Eggs
- (1 cup) Coconut milk
- (1.5 tsp) Stevia powder
- (1 Tbsp) Vanilla
- (84g or 2.9 oz) Coconut flour
- (1/4 tsp) Salt
- (3/4 Tbsp) Baking Powder
- (1/2 cup) Blueberries
Directions
Preheat oven to 350.
Mix eggs, coconut milk, stevia, and vanilla together in larger bowl.
Mix coconut flour, salt, and baking powder in small bowl.
Add wet ingredients to dry. Use mixer to combine thoroughly.
Add blueberries.
Pour into lined muffin tin. Bake at 350 for at least 20 min, until toothpick comes clean.
Notes: Other flavors: 1/2 tsp orange oil and 1/2 cup cranberries (no vanilla); or 1 small apple, peeled and diced, 1/2 tsp cinnamon, reduce vanilla to 1 tsp.
Baking powder can be made by mixing 2 tsp cream of tartar and 1 tsp of baking soda.
